Quick and Easy Recipes for the Holidays

Happy December!
Have your Christmas shopping all done?
Coal packed away for the naughty ones?
Carrots and cookies ready to go for Santa and the reindeer?
Yeah...me either.
 
But what I do have is a couple of quick & easy,
and even yummy, recipes that you might want to use over the holidays.
 
Lets just start with getting our vegetables out of the way.
I was watching Food Network a couple Saturday's ago.
(LOVE that channel!)
I was watching Trisha Yearwood's show, Trisha's Southern Kitchen.
She was  making this mouth watering corn salsa.
It goes together VERY quickly. 
Actually, this is so good y'all will forget your eating rather healthy!

I will share with you, because tomatoes aren't in season, I used cherry
tomatoes, just because they looked better than the orange things
they try to pass as tomatoes.
(can I get an AMEN!)
 
I took this to work and it was a hit.
Between myself and two of my friends, we at the whole bowl.
No lie.
We are still shocked.
I won't mention names.

This next recipe is a little on the sweeter side of life.
You may already know about it and have it as a staple in your recipe book.
 
Paula Deen's Mt Dew Cake.

Yeah
That's all I'll say about that.
 

 
It is SO moist!
It is SO yummy!
My mouth is watering right now looking at the picture.
 
I use Pam,
not my friend Pam,
or my cousin Pam,
but a spray Pam.
The one for baking.
Have you tried that yet?
It has a sweet flavor to it so it doesn't take away from your baked goods.
After spraying the pan with Pam
(I like how that sounds...lol)
I sprinkle it with some of the cake mix rather than flour.
 
 
After it's done baking,
and the cake has cooled,
I just slice it up and serve it.
You can make a glaze to put over it,
but it truly doesn't need it.
I've honestly never put a glaze over this cake.
The only glaze that takes place is in my eyes
after my sugar coma takes over.

The only adjustment I made was using 2/3 cup oil instead of 3/4.
 
I'll be back to more sewing over the weekend.
I have my divided basket started and am hoping to finish it up over the weekend.

That cake looks so delicious... I think I had some at a church meal, and was wondering what kind it was! It looked just like yours and was so moist. I think the mystery is solved!!

Thanks for the recipe ideas! (Not for the extra pounds that I'll put on after eating most of the cake, though! teehee)

Amen, Sister, on the tomatoes! Those cherry tomatoes, on the other hand, look sooooo yummy. The cake recipe is new-to-me, and I think I'll have to tempt my boys with it. They love Mt. Dew, and it looks delish!
